Northside Fort Worth Enchiladas

- 1lb very lean ground beef shopping list
- 1 med onion chopped shopping list
- 1 small can green chilis drained & diced shopping list
- 1 tsp garlic powder shopping list
- 1 tsp Mexican oregano shopping list
- 1 tsp ground cummin shopping list
- 1 1/2 TBLS good ground chili powder shopping list
- 1 tsp white sugar shopping list
- 1/2 tsp sea salt shopping list
- A few turns fresh ground black pepper shopping list
- 1 TBLS olive oil shopping list
- 2 cans Hatch brand enchilada sauce shopping list
- 2 cups 4 blend mexican cheese shopping list
- 12-16 corn tortillas shopping list
- sour cream shopping list
- Quacamole shopping list
How to make it
- In large skillet, heat olive oil; add ground beef, onions, diced chilis and seasonings. Cook, stirring until meat done. Remove from heat to cool. Place tortillas in damp clean kitchen towel and heat in microwave for 1 minute. Open cans of enchilada sauce, and pour enough sauce to cover the bottom of a large glass cassarole dish, about 1/3 of a can. Open Cheese blend, place in a bowl. Using one tortilla at a time, lay on clean flat wooden cutting board, place 1 teaspoon cheese and 1 tablespoon meat mixture in center. Roll Tortilla and place seam side down in prepared cassarole dish. continue this until all tortillas are filled and in cassarole. Pour the remaining enchilada sauce over assembled enchilads. Top with remaing cheese. Place in 350 degree oven and bake 30 minutes until cheese is bubbly. Remove from oven and let stand 5-10 minutes. Serve with sour cream, quacamole and favorite chuncky salsa.
