Northside Fort Worth  Enchiladas Recipe
Homemade Enchiladas for weeknight diner or carry-a-dish. I took this to work and it was gone in just a few minutes. Actually, I thought they where goning to eat the pan!

Ingredients
  • 1lb very lean ground beef
  • 1 med onion chopped
  • 1 small can green chilis drained & diced
  • 1 tsp garlic powder
  • 1 tsp Mexican oregano
  • 1 tsp ground cummin
  • 1 1/2 TBLS good ground chili powder
  • 1 tsp white sugar
  • 1/2 tsp sea salt
  • A few turns fresh ground black pepper
  • 1 TBLS olive oil
  • 2 cans Hatch brand enchilada sauce
  • 2 cups 4 blend Mexican Cheese
  • 12-16 corn tortillas
  • Sour Cream
  • Quacamole

Directions
  1. In large skillet, heat olive oil; add ground beef, onions, diced chilis and seasonings. Cook, stirring until meat done. Remove from heat to cool. Place tortillas in damp clean kitchen towel and heat in microwave for 1 minute. Open cans of enchilada sauce, and pour enough sauce to cover the bottom of a large glass cassarole dish, about 1/3 of a can. Open Cheese blend, place in a bowl. Using one tortilla at a time, lay on clean flat wooden cutting board, place 1 teaspoon cheese and 1 tablespoon meat mixture in center. Roll Tortilla and place seam side down in prepared cassarole dish. continue this until all tortillas are filled and in cassarole. Pour the remaining enchilada sauce over assembled enchilads. Top with remaing cheese. Place in 350 degree oven and bake 30 minutes until cheese is bubbly. Remove from oven and let stand 5-10 minutes. Serve with sour cream, quacamole and favorite chuncky salsa.
