How to make it

  • Put all in blender, press chop 10 seconds. Stop. Use spatula. Push mixture down blend again till blended
  • Fry in hot oil. make pancakes thin.
  • serve with applesauce and sour cream.

    LOVE THESE. I had an abundance of summer squash and I substituted some if the potato with squash, the ratio was 1:2 squash to potatoes. I also upped the portions, this recipe is forgiving so don't worry about precise measurements. I used my Ninja mixer and it was so easy, I will never shred potatoes again!

    To answer a previous poster's concern about soft/gooey in the middle: when I have had authentic Russian / Jewish potato pancakes they were always soft in the middle. If the texture is literally slickly like glue, the problem is your batter was over-blended and/or excessively stirred.

    Mine came out too gooey inside, even tho they were very thin. The inside felt like it wasn't quite cooked. Why? What could fix it? Thanks.

    I like potato pancakes like the old fashion ones these are truly the best in appearence and taste. our favorite recipe Quick and easy to blend and the potatoes stay white. Good Job TIKI

    I grew up doing the raw potato and grater thing for both dumplings and pancakes...my knuckles took the extreme punishment. This is a good way to make it simple!

    This is a really interesting recipe because without the flour, etc. in the blender pulsing it would create watery potato slop. I am delighted to know of this variation and answer to that dilemna.

    Trust me this is so much easier than the normal way. I grew up eating this every week if I could. Grating it the usual way is so time consuming let alone the nuckles!! As long as you make them thin they are just like the real deal. Trust me, My Baba use to make her potato pancakes often for me. Thin and crispy. They did not have baking powder in them. This amount in this recipe is so minimal and keeps it from browning until you get them fried up!
