Hot and Spicy Cure For Fish And Meats

- 1 medium dried ancho chili shopping list
- 3 tablespoons cumin seeds shopping list
- 2 tablespoons coriander seeds shopping list
- 3 tablespoons pureed canned chipotle chilies in adobo sauce shopping list
- 2 tablespoons minced garlic shopping list
- 2 tablespoons minced fresh cilantro shopping list
- 2 tablespoons ancho or pasilla chili powder shopping list
- 2 tablespoons coarse salt shopping list
- 2 tablespoons freshly ground pepper shopping list
How to make it
- Place ancho in bowl then cover with warm water and soak for one hour.
- Drain and puree.
- Toast cumin and coriander seeds in a cast iron skillet over medium heat stirring frequently.
- Grind seeds.
- Combine ancho chili puree, cumin, coriander and remaining ingredients in a food processor.
- Puree into a thick paste.
