How to make it

  • Place ancho in bowl then cover with warm water and soak for one hour.
  • Drain and puree.
  • Toast cumin and coriander seeds in a cast iron skillet over medium heat stirring frequently.
  • Grind seeds.
  • Combine ancho chili puree, cumin, coriander and remaining ingredients in a food processor.
  • Puree into a thick paste.
