Ingredients
  • 1 medium dried ancho chili
  • 3 tablespoons cumin seeds
  • 2 tablespoons coriander seeds
  • 3 tablespoons pureed canned chipotle chilies in adobo sauce
  • 2 tablespoons minced garlic
  • 2 tablespoons minced fresh cilantro
  • 2 tablespoons ancho or pasilla chili powder
  • 2 tablespoons coarse salt
  • 2 tablespoons freshly ground pepper

Directions
  1. Place ancho in bowl then cover with warm water and soak for one hour.
  2. Drain and puree.
  3. Toast cumin and coriander seeds in a cast iron skillet over medium heat stirring frequently.
  4. Grind seeds.
  5. Combine ancho chili puree, cumin, coriander and remaining ingredients in a food processor.
  6. Puree into a thick paste.
