This is truly a yin and yang dessert-the sweet and the tangy and soo refreshing.Tested them on my company today and got 2 thumbs up and an empty freezer LOL

Ingredients
  • Cucumber Jalapeno Paletas - Mexican Popsicles
  • 3 cups of cubed cucumber,
  • 1 jalapeno devoid of its hot stuff,
  • 2/3 cup sugar
  • 1/3 cup lemon juice.
  • The sugar and lemon juice.
  • Combine everything in your blender.
  • Push the puree through a strainer or two.
  • I couldn't find actual popsicle molds, so I used the next best thing: double shot glasses and chopsticks.
  • Throw those bad boys in the freezer and let chill for well over 3 hours. Remember to leave an inch or so for expansion.
  • Serve your Cucumber and Jalapeno Paletas.

Directions

These Paletas were great, I may make them again on Saturday to go with my Carne Asada, Cucumber Salad, Aji Verde and rice. I wish I could have scored them a ten, because they are that great!~!! Right now I am salivating thinking of them again...

Alterations


I made these as drinks for friends during a impromptu small dinner gathering.

However, instead of 1/3 cup of lemon juice I only added a Tablespoon of lemon juice, and a double shot of Absolut New Orleans Vodka. Also, I only chilled them in the freezer, I did not freeze them completely, just got them really cold.

*Absolut New Orleans Vodka is a new fruity mango vodka with a slight kick of spicy black pepper.
