No Bread Reubens Recipe

Ingredients

2 frozen hash brown patties

1 tablespoon butter, softened

2 thick slices of corned beef

1/2 cup sauerkraut, rinsed and drained

2 tablespoons brown sugar

2 tablespoons cinnamon applesauce

1/2 cup 1000 Island dressing

1 cup shredded swiss cheese

Directions

Place hash brown patties in a greased 11x7x2-inch baking dish.

Spread each with butter.

Top with corned beef.

In a bowl, combine the sauerkraut, brown sugar and applesauce.

Mix well and spoon over the corned beef.

Top with 1000 Island dressing and swiss cheese.

Bake, uncovered, at 400° for 15-20 minutes or until heated through.

Your killing me here! We have a local deli, delicious deli, that makes rubens on potato pancakes!! SO SO GOOD. I love this recipe cause as much as I LOVEEEE and grew up on potato pancakes. Hashbrown version is easier and just as good! Making this for missy, She is addicted to this. Thanks for a great post as always!
