How to make it

  • Place hash brown patties in a greased 11x7x2-inch baking dish.
  • Spread each with butter.
  • Top with corned beef.
  • In a bowl, combine the sauerkraut, brown sugar and applesauce.
  • Mix well and spoon over the corned beef.
  • Top with 1000 Island dressing and swiss cheese.
  • Bake, uncovered, at 400° for 15-20 minutes or until heated through.

    Your killing me here! We have a local deli, delicious deli, that makes rubens on potato pancakes!! SO SO GOOD. I love this recipe cause as much as I LOVEEEE and grew up on potato pancakes. Hashbrown version is easier and just as good! Making this for missy, She is addicted to this. Thanks for a great post as always!
