What a terrific idea for a cold winter's day brunch or as a main for supper. Very tasty and great with a nice thick slice of dark bread.

Ingredients
  • Garlic bulbs, whole 4
  • 1 lb Bacon
  • 8 oz Onions, chopped
  • 1 lb Carrots, diced
  • 2 oz All purpose flour
  • 5 lbs potatoes skinned or not and cubed
  • 1 gallon Chicken broth
  • 2 Bay leaves
  • 1 quart Half & Half Cream
  • ½ cup Fresh parsley, chopped
  • Salt and freshly ground pepper to taste
  • Directions:

Directions
  1. Wrap garlic in foil and roast at 375 ° F for 75 minutes in a CONVENTIONAL OVEN , until soft.
  2. Cool and press out garlic.
  3. Set aside.
  4. In a large skillet, cook bacon until browned.
  5. Add onions and carrots and cook until tender.
  6. Add flour and cook 1 minute.
  7. In a large pot, stir together potatoes, chicken broth, bacon mixture and bay leaves.
  8. Simmer 20 minutes or until potatoes are tender.
  9. Add garlic, half & half cream and parsley.
  10. Heat through.
  11. Season with salt and pepper.

This recipe sounds great but it seems to make alot, does it freeze welll?

No really sounds wonderful. I might use an immersion blender to make it all smooth and delicious.
