Adis Flaxseed Fruit Muffins

- 1 cup whole spelt or wheat flour shopping list
- 1/2 cup white spelt or wheat flour shopping list
- 1/2 cup flaxseed meal, slightly grounded shopping list
- 1/2 cup rolled oats shopping list
- 2 teaspoons baking powder shopping list
- 1/2 teaspoon baking soda shopping list
- 2 eggs shopping list
- 1 cup buttermilk or yogurt shopping list
- ½ cup honey shopping list
- 2/3 cup dry fruit of your choice, chopped shopping list
- ½ cup brown sugar shopping list
How to make it
- Mix dry ingredients together in a medium bowl.
- Beat liquid ingredients in a small bowl; keep fruit in reserve.
- Stir liquid ingredients into dry ingredients all at once, add fruit and stir until thoroughly moistened but still lumpy.
- Grease muffin pan or line with paper or foil cups and fill about two-thirds full. Sprinkle brown sugar on top of batter and bake at 400°F 20 to 25 minutes until golden.
- Cool on a wire rack.
- Keep tightly covered .

THESE ARE AMAZING!~ I made them as mini-muffins and baked for only 10 minutes @ 400 F ....AWESOME! Thank you for a great recipe. Oh and I used raisins AND FROZEN blueberries. It worked perfectly!
