Loverly Lemon Almond Shortbread Cookies

- 3/4 cup cornstarch shopping list
- 5 tablespoons powdered sugar shopping list
- 1 cup flour shopping list
- 2 sticks butter shopping list
- Filling for indentation in cookie shopping list
- 1 teaspoon lemon juice shopping list
- 1 teaspoon almond extract shopping list
- 3 tablespoons unsalted butter, soft shopping list
- 1 cup powdered sugar, sifted shopping list
How to make it
- Sift cornstarch, sugar and flour together
- Blend in butter by hand
- Pinch off a teaspoon of dough
- Roll into a ball
- Place on a lightly greased cookie sheet, (may use parchment)
- Make INDENTATION in CENTER of cookie with thumb
- Bake 15 minutes at 350 degrees
- FILLING:
- Mix the two flavorings in butter
- Mix in powdered sugar
- Fill the center of cookies, while hot, with a demitasse spoon
- NOTE: Handle carefully until cool....may break easily
