STRAWBERRIES A LA BLUE FOX Recipe

Ingredients
  • 30 Jumbo strawberries
  • 2 egg yolks
  • 2 tablespoon granulated sugar
  • 2 table spoon GOOD sherry, port or Marsala wine
  • confectioners' Sugar
  • 1 cup heavy cream

Directions
  1. Wash strawberries in cold water
  2. Drain well then hull
  3. From point, slit each berry into quarters, BUT DON'T cut through bottom..
  4. Refrigerate
  5. Make Sabayon Cream:
  6. In top of double boiler, with portable elec mixer at med speed.. beat egg yolks with sugar and sherry or wine until well combined.
  7. Pleace over boiling water, beat at med speed until mixture is thinck and forms soft peaks when beater is slowly raised.. About 5 minutes
  8. Remove from heat
  9. Immediately set top of double boiler in a bowl of ice... continue beating until mixture is cool... About 2 minutes..
  10. Let stand in frig in ice for about 30 minutes..
  11. Meanwhile in a med bowl, combine 1/4 cup confectioners sugar and cream... Put in frig along with the beater blades... to chill for 30 minutes..
  12. Add chilled cooked mixture to chilled cream mixture.. beat until stiff
  13. Fill each Strawberry with Sabayon mixture using pastry bag with pretty tip.. bring filling to top of strawberry...
  14. Refrigerate
  15. To servy.. sprinkle filled berries lightly with confectioners sugar..
  16. Arrange on a mound of crushed ice..
  17. I have made the Sabayon the night before... and held in frig with Saran wrap tight on it... I have also added a drop of red food coloring to give it a pink hue...
  18. These are great for Womens partys... We deserve it!

Linda, while this looks like it will take some time, I can picture these little gems on the bed of ice...not only a pretty presentation (I like your idea of tinting the filling pink!), but these would be kick butt delicious - what a way to impress the women!! But you're right - we deserve it...
