Apple Cake With Caramel Sauce Recipe
This cake is great served warm with the warm caramel sauce. I sprinkle some chopped nuts on top of each serving, too. It's a cool weather comfort food. The caramel sauce is great on ice cream, too.

Ingredients
  • CAKE:
  • 2 c sugar
  • ½ c butter,softened
  • 2 eggs, beaten
  • 2 c flour
  • 1 t baking soda
  • 1 T cinnamon
  • ½ t nutmeg
  • 1 t salt
  • 1 c pecans, chopped
  • 6 baking apples (or enough to make 4 c chopped)
  • SAUCE:
  • ½ c unsalted butter
  • 1 c packed light brown sugar
  • ½ t salt
  • ½ c evaporated milk.
  • 1 ½ t vanilla extract

Directions
  1. Cream sugar and butter.
  2. Add the beaten eggs; mix well.
  3. In small bowl, combine flour, soda, cinnamon, nutmeg and salt.
  4. Add flour mixture to first mixture; mix well. Batter will be extremely stiff.
  5. Peel and chop the apples. Stir them into the batter along with the chopped pecans.
  6. Spread in greased 9x13 pan.
  7. Bake 45 min – 1 hour at 300 deg.
  8. For Sauce:
  9. In a 4-cup glass measure or deep bowl, microwave butter on high for 45-60 sec to melt.
  10. Whisk in brown sugar and evaporated milk until smooth.
  11. Microwave on High for 2-2 ½ min until bubbly and slightly thick, stirring once.
  12. Stir in vanilla.
  13. Serve warm over cake.
