Noodles With Peanut Basil Sauce

- 1 cup fresh snow peas shopping list
- 8 ounces uncooked fettuccine shopping list
- 1/2 cup coconut milk shopping list
- 3/4 cup vegetable broth shopping list
- 1/2 cup crunchy peanut butter shopping list
- 3 tablespoons soy sauce shopping list
- 2 tablespoon lime juice shopping list
- 1 garlic glove minced shopping list
- 2 teaspoons sugar shopping list
- 3/4 teaspoon ground coriander shopping list
- 1 cup firmly packed basil leaves shredded and divided shopping list
- Chopped dry roasted peanuts shopping list
- bean sprouts shopping list
- Dried crushed red pepper shopping list
How to make it
- Trim snow peas and cut in half diagonally.
- Bring water to boil in a large heavy saucepan then add snow peas and cook 45 seconds.
- Drain and plunge into ice water to stop cooking process then drain and set aside.
- Cook pasta according to package instructions then drain and set aside.
- Whisk together coconut milk and next 7 ingredients in a large saucepan.
- Cook over medium low heat whisking occasionally for 5 minutes.
- Add snow peas, hot cooked pasta and 3/4 cup basil then toss and place on serving platter.
- Sprinkle with remaining 1/4 cup basil and serve with desired toppings.
