How to make it

  • Preheat oven to 400F,Grease a 26-28cm x 2cm high aluminum dish with butter and keep aside.
  • For the syrup:
  • Heat sugar and water over medium heat till sugar is dissolved,then boil for 5 minutes add the lemon juice and let it cool.Syrup will thiken while cooling.
  • Kunafah:
  • In a large bowl mix kunafah with sugar,add the melted butter or ghee and mix well till all kunafah stipes are combined with butter or ghee.Pat half of the dough in the bottom of the dish and using a smaller dish press the dough tightly till you get an even surface.
  • Filling:
  • In a seperate bowl using a fork,mix together the cheese,ghee and cream till all mixed and pour it over the first laye.Spread and make sure not to go till the edge of the dish .Cover with the other half of kunafah dough evenly.Using your hand,lightly press the top kunafah layer to get it evenly distributed and that all the filling is covered evenly.Brush the surface with a little melted ghee or butter.
  • Bake for 30-40 minutes till the top is colored golden.I use the broiler at the last 2 minutes to get the desired golden color.Take out of oven and immediatly pour the cold syrup evenly over the top.Take care it is too hot.Leave to set for 3-4 minutes and flipp it in a serving plate.
  • Garnish with pistachio all around

    I finally found the kataifi dough for this and made it about a week ago for a bridal shower. It was a hit! Now they will always ask me to make it.
