This recipe comes from a Sunday School mate. She likes to have the class over once a month for lunch and this is one of her popular dishes. It's quick and loaded with great flavors. Enjoy

Ingredients
  • 3 cups halved cherry tomatoes
  • Nonstick cooking spray
  • 1/4 teaspoon freshly ground black pepper
  • 3 ounces sourdough bread torn into pieces
  • 1 teaspoon butter melted
  • 12 ounces large elbow macaroni
  • 2 cups shredded extra sharp cheddar cheese
  • 1/4 cup egg substitute
  • 1-1/2 teaspoons kosher salt
  • 1/4 teaspoon ground red pepper
  • 12 ounce can evaporated milk

Directions
  1. Preheat oven to 375.
  2. Place tomatoes in a rectangular baking dish coated with cooking spray.
  3. Sprinkle with black pepper then bake at 375 for 30 minutes stirring occasionally.
  4. While tomatoes cook place bread in a food processor and plus until crumbly.
  5. Toss crumbs with melted butter then sprinkle on baking sheet and bake 12 minutes.
  6. Stir crumbs frequently to avoid sticking.
  7. Cook macaroni in boiling water for 7 minutes then drain well.
  8. Return macaroni to pan and place over medium low heat.
  9. Add cheese and remaining ingredients.
  10. Cook over medium low heat for 4 minutes stirring constantly.
  11. Stir in tomatoes.
  12. Sprinkle each serving with about 3 tablespoons breadcrumbs.
