BLT Baked Salmon For Two Recipe
I love BLT's, can't have the bread for now. Salmon seemed to be the perfect vehicle to make a BT topping on a L bed. EASY fix for two.

Ingredients
  • 12 oz salmon- 2 six ounce pieces
  • 1/4 cup mayonnaise
  • 2 tablespoons unsw. ketchup (no sugar/low carb/diabetic)
  • 6 pieces sun-dried tomatoes soaked in 1/4 cup of warm vermouth
  • 4 strips bacon, cooked, cut in 1" pieces
  • 1/4 cup chopped onion
  • olive oil
  • 1 head of romaine sliced in half vertically and grilled on an indoor grill pan.

Directions
  1. Mix mayo and ketchup to make the top coating.
  2. Heat vermouth in small sauce pan just below simmer and add the tomatoes to plump for a few minutes.
  3. Spray casserole dish with non-stick spray. Lay salmon pieces in and cover with dressing.
  4. Cut up drained tomatoes and lay on top; sprinkle with chopped onion. Pour leftover vermouth in the casserole to help steam the salmon
  5. Bake at 400 for 20 min.
  6. Meanwhile, grill the romaine brushed with olive oil and sprinkled with kosher salt and cracked black pepper
  7. If the salmon looks a little anemic, put under broiler for just a few minutes to brown top.
  8. Serve on top of chopped grilled romaine.
  9. Top with broken cooked bacon pieces.
  10. Dinner for two, fast and easy..
