Ingredients
  • 1 Tbl butter, not margerine
  • 2 4 oz salmon fillets, skin removed
  • 2 Tbl lime juice
  • 1 Tbl Teriyaki sauce
  • 2 green onions, sliced (white part only)
  • ½ tsp Herbs de Provence
  • 1 lime, cut into wedges (optional)

Directions
  1. 450 oven
  2. Add butter to baking dish, melt, turn dish to coat
  3. Place fillets in baking dish, unskinned side up
  4. Stir together all ingredients except lime wedges
  5. Drizzle over salmon
  6. Bake until fish flakes easily with fork, about 25-30 minutes
  7. Serve with lime wedges, if desired

Thanks for the suggestion! This sounds great, and good for my diet! Which is why I started eating salmon in the first place. LOL.


I cooked this up last night, and it was just delicious! It was my first time cooking dinner since they forced me to in middle school for a grade, and it turned out really well. The only difficulty I had was that in my oven, it only takes about 20 minutes to cook, so my salmon was a little dry by the time I got it out at 25. But now I know, so next time I make it, I can make it better!
