How to make it

  • Stir together egg whites, sugar and water together in top of double boiler.
  • With water boiling in bottom of double boiler, beat with electric mixer approximately 7 minutes or until frosting looks fluffly and holds soft shape.
  • Remove from water, add vanilla and beat until frosting forms stiff peaks. Don't over-cook, it will become grainy.
  • Use to frost.

    I just made this for my white cupcakes. I was steaming mad during that seven minutes because I didn't believe it was going to form stiff peaks because of the brown sugar. But whaddya know! Stiff peaks and it's delicious!! Love this recipe. Nice tweak on white cake.

    Every year for my father's birthday we bake him a chocolate cake with this frosting. We use a little cream of tartar too- when the cake has been sitting for awhile, the frosting gets hard on top and still fluffy and light underneath- soooo good! Thanks for posting

    I CANT BELIEVE YOU POSTED THIS. I OPENED IT UP AND THOUGHT IT WAS WITH WHITE SUGAR. MY MOTHER IN LAW ALWAYS USES THE BROWN SUGAR. IT IS SO DELICIOUS AND ALMOST CARAMEL LIKE. IT IS ANDHAS BEEN THE ONLY KIND SHE MAKES. IT IS ALWAYS NICE TO FIND A COMMON RECIPE. I AM SO HAPPY YOU POSTED THIS. LOL NOW I CAN MAKE IT. SHE DOES IT FROM HER HEAD AND I CANT GET A RECIPE.
