Lemon Eggs In Foccacia Recipe
This is a great egg dish that can add a wow factor at a brunch or any get together. It has a gourmet taste, but is so easy to make! I know you'll love it.

Ingredients
  • 1 foccacia bread loaf
  • 2 TBS of olive oil
  • 1/2 lemon juiced and zested
  • 4 eggs
  • 1/4 cup basil leaves, chopped
  • 1/2 cup Parmesan
  • 1/4 tsp. salt
  • 1/2 tsp. pepper
  • 1 cup of half and half

Directions
  1. Preheat oven to 350.
  2. Cut the top off the foccacia and hollow out the bread inside.
  3. Tear the top of the foccacia and cut it into pieces, put aside
  4. In a small bowl combine the olive oil, lemon juice and lemon zest
  5. Brush the olive oil mixture on the inside of the bread
  6. Bake the bread for 10 minutes.
  7. While the bread crisps up in the oven, whisk together the eggs, basil, cheese, salt, pepper and milk.
  8. Stir in the bread pieces, do not exceed 4 cups
  9. Pour egg mixture into foccacia and bake for 35 minutes.
