Ingredients
  • 12 Roma tomatoes, seeded & diced
  • 1/2 red onion, diced finely
  • 1 jalapeno pepper, seeded & diced finely
  • 2 cloves garlic, crushed
  • juice of 1 lime
  • 1 T olive oil
  • 4 T finely chopped fresh cilantro
  • 1 tsp coarse salt
  • 1/2 tsp freshly ground black pepper

Directions
  1. Mix everything together
  2. Cover & refrigerate for at least 3 hours before serving.

Mmmm all my favourite stuff, this would go so well with a nice pink leg of lamb done in a good hot oven so that the outside is crispy, drool.

might one suggest adding some green bell pepper for contrast and that greeny flavour.
