There are lots of green chile stew recipes, this is one with my favorite ingredients.

Ingredients
  • 1 pound pork roast or pork loin cut into bite size pieces
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons oil
  • 1/2 cup chopped onions
  • 2 larges cloves chopped garlic
  • 2 cups chicken broth
  • 1 to 2 cups water to cover vegetables
  • 1 teaspoon cumin
  • 1 cup chopped green chile

Directions
  1. Combine flour, salt & pepper.
  2. Coat pork pieces in flour mixture & brown in oil.
  3. Add onions, garlic and chicken broth and simmer on low until pork is tender. Usually about an hour. Can also be put in a slow cooker for several hours at this point.
  4. Add water, carrots, potatoes and green chile and simmer on low until vegetables are done.
  5. Serve warm.

Love green chile stew. Discovered it when I lived in ABQ, NM...better than chix noodle for a cold.. Great post.
