How to make it

  • Dissolve Jello in 1 cup hot water and let cool. Beat first 4 ingredients for about 1 minute. Pour in Jello after it cools and beat another minute. Pour in greased 9 x 13 cake pan. Bake at 325 degree for 30 minutes. When done, poke holes in cake almost all the way to the bottom of the pan - I use a chopstick - and cover with glaze. Let it soak in good, cut and serve!

Has anyone tried this with a lemon box cake instead of yellow? I'm going to, because I have one in the pantry already...think I'll try it without the extract.

This was popular with the men I made it for last night. They had requested a lemon cake, AND I HAD NO LEMONS, only lemon jello and lemon extract. I frosted it with a tub of classic white frosting, while cake still hot.

I make something just like this. Except I use a lemon cake and instead of glaze, I mix a pkg of Dream Whip with an instant lemon pudding and milk. So, so good and I'm going to make it this weekend!

Great recipe that I have made for years. It is an old TandT..absolutely delicious with coffee. In fact, I ate a piece in a high end coffee shop this summer. The last time I baked it, I left out the lemon extract..didn't have any. Baked it in a Bundt pan, and just drizzled the icing. It was delish!!
