Asparagus Mornay Recipe
This is a great way to cook asparagus. It always impresses my guests when I serve this at dinner parties. Hope you enjoy it as much as we do.

Ingredients
  • 1-1/2 pounds asparagus trimmed
  • 1 tablespoon butter
  • 1 tablespoon all purpose flour
  • 1 cup half and half cream
  • 1/2 teaspoon chicken bouillon granules
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 1/2 cup shredded Swiss cheese
  • 2 tablespoons crushed butter flavored crackers

Directions
  1. In a skillet cook asparagus in a small amount of water until crisp tender then drain.
  2. Arrange spears in the bottom of a greased 1-1/2 quart baking dish then set aside and keep warm.
  3. In small saucepan melt butter over low heat then add flour and cook and stir for one minute.
  4. Whisk in cream, bouillon, nutmeg and salt.
  5. Bring to a boil over medium heat then cook and stir for two minutes.
  6. Remove from heat and stir in cheese until melted.
  7. Pour over asparagus then sprinkle with cracker crumbs.
  8. Broil 6 inches from the heat for 5 minutes.

Alterations


To make this gluten free and vegetarian:
Gluten Free
use
1 tablespoon Gluten free rice flour instead of1 tablespoon all purpose flour
use
2 tablespoons Gluten Free Corn Flake crumbs instead of
2 tablespoons crushed butter flavored crackers

To make this a vegetarian recipe:
use
1/2 teaspoon Vegetable bouillon granules
instead of
1/2 teaspoon chicken bouillon granules
