Mexican Mole Chicken

- 1 (14 oz.) can tomato shopping list
- 1 green bell pepper, chopped fine shopping list
- 8 skinned & boned chicken thighs shopping list
- 2 tablespoons chili powder shopping list
- 1 chipotle chile, or to taste shopping list
- 3 tablespoons cocoa shopping list
- 2 teaspoons cumin shopping list
- 1 green chili pepper, chopped shopping list
- 3 cloves garlic, minced shopping list
- 1 onion, chopped fine shopping list
- 1 tablespoon sugar shopping list
- 1/2 cup water shopping list
- salt and pepper to taste shopping list
How to make it
- Place all ingredients except cocoa and sugar in large pot.
- Cover and simmer until chicken is very tender (about an hour).
- Remove chicken from pot.
- Add cocoa and sugar.
- Simmer sauce until thick.
- Return chicken to sauce and heat 5 to 10 minutes to blend flavors.
- Serve over rice.
