How to make it

  • Wash beans and add salt and enough water to cover then soak overnight.
  • The next day drain beans and combine with 2 quarts water in a large saucepan or stockpot.
  • Add ham hock and boil for 3 hours.
  • Add onions, celery, tomatoes, red pepper, salt and pepper then simmer 30 minutes longer.

    It's a good soup. Did you really mean to boil the beans for 3 hours? I only did a simmer.
