Ingredients
  • Olive Oil
  • 1 T. Margarine
  • 2 Pinches Kosher Salt
  • 1/2 box Rotini Pasta
  • Olive Oil
  • 2 T Margarine
  • 15 oz. Frozen Spinach
  • 1/2 large white onion, chopped
  • 1 red pepper, chopped
  • 2 T chopped garlic
  • 1 T worcestershire sauce
  • seasoned salt
  • garlic pepper
  • italian seasoning
  • 1 can mushroom slices, drained
  • 1 can cream of mushroom soup
  • 1 soup can milk
  • 1/2 c paremsan cheese
  • 1 cup shredded colby jack cheese

Directions
  1. Add Extra Virgin Olive Oil and 1 T butter to pot of water and bring to boil
  2. Add pasta and cook according to package directions
  3. While pasta is cooking, drizzle EVOO into large skillet
  4. Add 2 T Margarine
  5. Saute together: spinach, onion, red pepper and garlic
  6. Drain all water in paper towel lined colander
  7. Return to skillet
  8. Add all remaining ingredients
  9. Simmer until pasta is done
  10. Rinse pasts in cool water
  11. Add to spinach mixture and serve
