How to make it

  • Add Extra Virgin Olive Oil and 1 T butter to pot of water and bring to boil
  • Add pasta and cook according to package directions
  • While pasta is cooking, drizzle EVOO into large skillet
  • Add 2 T Margarine
  • Saute together: spinach, onion, red pepper and garlic
  • Drain all water in paper towel lined colander
  • Return to skillet
  • Add all remaining ingredients
  • Simmer until pasta is done
  • Rinse pasts in cool water
  • Add to spinach mixture and serve
