How to make it

  • Start by washing and preparing your ingredients.
  • Mince your garlic
  • dice your onions and your ginger.
  • Carefully cut the chile lengthwise and remove the seeds
  • Slice it into tiny rings and then wash your hands.
  • Don't rub your eyes or nose until you've washed your hands.
  • peel your potatoes and remove any greenish bits or eyes
  • dice them
  • Add cumin and coriander seeds to a pestle.
  • Add the turmeric too and grind
  • Skip this step if you're using curry powder.
  • Get your stock ready in a mixing bowl
  • Melt your butter in your pot over medium to high heat.
  • Add the onion, ginger and garlic to the butter once it's melted and cook it until it smells delicious and your onions are clear.
  • add the chilies, turmeric, coriander & cumin seed (or curry) mixture to the pot
  • stir and be ready to add everything else in.
  • Stir it all up once or twice and then cover your pot and turn up the heat to high for 15-20 minutes.
  • Remove it from heat and let it stop bubbling
  • get out your trusty hand blender or boat motor as Emeril calls it
  • Blend, blend, blend
  • strain 1/2 of the mixture in an effort to thin the soup out. You can skip this step if you prefer your soup to be a thicker puree. I like mine thick.
  • ladle it into bowls and garnish with whatever you've got on hand. I used green onion, but coriander also works if you like it.

    The combination of potato and cauliflower gives it such a nice texture.
    I love the fragrant cumin seeds and coriander seeds ground with the turmeric the end result is a nice mellow yellow color. The burst of heat from the chillies and the subtle ginger flavor brighten this lovely soup. The directions are clear and easy to follow. You have my 5

    This sounds like a good recipe, but the directions are cumbersome and should be edited for clarity.

    I have just made this soup for my lunch and its gorgeous. Its worth taking your time when you add the spices to stir over a low/medium heat until they become aromatic, before adding remaining ingredients. Will definatly be making this again
