This is my late mother-in-law's recipe she gave me years ago. I serve this at Christmas as a substitute for fruitcake that many people don't like.

Ingredients
  • 1 C. chopped dates
  • 1 C. boiling water
  • 1 tsp. baking soda
  • 1 C. sugar
  • 1/3 C. butter
  • 2 eggs, beaten
  • 1 tsp. pure vanilla extract
  • 1 1/2 C. flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 C. nuts

Directions
  1. Preheat oven to 350 degrees F.
  2. Pour the boiling water over the chopped dates and then add the baking soda.
  3. Let stand while mixing the rest of the ingredients.
  4. Cream together the sugar, eggs, and butter.
  5. Add the vanilla.
  6. Sift together the flour, baking powder and salt.
  7. Add to the above creamed mixture.
  8. Blend in the prepared date mixture.
  9. Stir in the nuts.
  10. Bake in a rectangular or loaf pan for about 30 mins. or more (depending on pan being used) or until cake tester (toothpick) comes out clean.
  11. The cake can be iced but I think it tastes better without because it's so deep and rich ...
  12. and flavourful enough without all the extra sugar on top.
