How to make it

  • Preheat oven to 350 degrees F.
  • Pour the boiling water over the chopped dates and then add the baking soda.
  • Let stand while mixing the rest of the ingredients.
  • Cream together the sugar, eggs, and butter.
  • Add the vanilla.
  • Sift together the flour, baking powder and salt.
  • Add to the above creamed mixture.
  • Blend in the prepared date mixture.
  • Stir in the nuts.
  • Bake in a rectangular or loaf pan for about 30 mins. or more (depending on pan being used) or until cake tester (toothpick) comes out clean.
  • The cake can be iced but I think it tastes better without because it's so deep and rich ...
  • and flavourful enough without all the extra sugar on top.

    This is exactly the recipe used for "Sticky Toffee Pudding". You just finish it with a topping of a caramel sauce and whipped cream. Thank you, it's delicious!
