How to make it

  • Heat pot with oil in it on low flame
  • Simmer onions and garlic (until onions are clear)
  • Chop zucchini in nice rustic sized pieces
  • Add to pot and let simmer 2 minutes
  • Add 1 can of tomato
  • Add salt and pepper to your liking (you can also add red pepper if you like things spicy)
  • Cook until zucchini is to your liking (i like it to be on the firm side)
  • In a separate pot cook pasta
  • Plate pasta in bowl and top with zucchini sauce top with grated cheese. Serve nice and hot delish!

    So funny you messaged... I went to store to get all the ingredents to make this... the summer squash are starting to come in here... the nice small ones.. Our season for veggies start now... While all of you are freezing your butts off up there! LOL They are starting to pick the oranges and grapefruits on our road this week...

    A friend taught me to make this... We love it! Great in the summer when the veggies are right out of the garden...Great post... thanks for reminding me of this dish.. have not made in a long time!
