Pumpkin Fritters With Caramel Sauce

- 375 ml self raising flour (1 + 1/2 cup) shopping list
- 1 ml salt (1/4 teaspoon) shopping list
- 10 ml baking powder (1 tablespoon) shopping list
- 625 ml cooked, minced pumpkin (2 1/2 cups) shopping list
- 2 eggs, beaten shopping list
- oil for deep frying shopping list
- Sauce: shopping list
- 320 ml brown sugar (1 1/2 cups) shopping list
- 125 ml boiling water (1/2 cup) shopping list
- 250 ml milk (1 cup) shopping list
- 50 ml corn starch (4 heaped tablespoons) shopping list
- few cinnamon sticks shopping list
How to make it
- Sift dry ingredients togeher for the dough.
- Stirr in the pumpkin.
- Stirr in the eggs.
- Deepfry spoonfull of the dough.
- Drain on brown paper.
- Place in a bowl.
- Sauce:
- Bring everything to the boil, except the maizena.
- Cook for 2 minutes.
- Take out the cinnamon sticks.
- Make a pasta with the maizena and a little bit of water.
- Stirr into the sauce until thickened.
- Pour over fritters.
