Smoked Salmon With Apple Glaze Recipe
I'm not sure where this recipe came from, but it is one that my mother and I have made for years upon years. It is an excellent recipe especially when you want something light. Enjoy

Ingredients
  • 2 fresh salmon fillets
  • 3/4 cup frozen apple juice concentrate thawed
  • 1 tablespoon snipped fresh rosemary
  • 1/2 teaspoon coarsely ground black pepper
  • 1/4 teaspoon salt
  • 6 pecan wood chunks
  • 2 tablespoons apple jelly melted

Directions
  1. Rinse fish well and pat dry then place in a shallow glass dish.
  2. In a small bowl combine thawed apple juice concentrate, rosemary, pepper and salt.
  3. Set aside 1/4 cup of the marinade then pour remaining marinade over fish and turn to coat.
  4. Cover and marinate in the refrigerator for at least 1 hour or up to 2 hours.
  5. At least 1 hour before smoke cooking soak wood chunks in enough water to cover.
  6. Drain before using.
  7. Drain fish discarding marinade.
  8. Arrange preheated coals, drained wood chunks, and water pan in preheated smoker.
  9. Pour water into pan then place fish on grill rack over water pan.
  10. Cover and smoke for 1-1/2 hours brushing with reserved marinade after 1 hour of smoking.
  11. Just before serving drizzle fish with melted apple jelly.
