Pork Tenderloin encrusted with Pistachio nuts pan seared topped with honey glaze

Ingredients
  • 1 cup pistachio nuts ground to a fine powder
  • 1 pork tenderloin with membrane removed
  • olive oil
  • 2 shallots peeled and chopped
  • 1/2 cup apple honey
  • 1/2 cup bourbon
  • 1 cup demi-glaze (or brown sauce)

Directions
  1. Roll pork tenderloin in ground pistachio nuts.
  2. Sear tenderloin on all sides in olive.
  3. Remove from pan and finish in another pan in a preheated 350° F oven until pork reaches an internal temperture of 160° approxmately 25 minutes ( I prefer 145°)
  4. Add shallots to stove top pan and saute.
  5. Add honey bourbon and reduce by half.
  6. Add demi-glaze and stir
  7. Slice pork tenderloin and spoon on a thin even layer of the honey bourbon glaze

Holly shizzle the pork sounds so good I def have to try this! and very cool of you to post this so I copy and pasted it to my myspace! I will send out bulleintins and peeps will repost and millions will do this! I promise;)


Can't wait to try this. My daughter works in a great restaurant in Knoxville and she brought a similar recipe home and it was fabulous. It had a dijon coating on the pork tenderloin before rolling in the pistachios. Served with a wild mushroom sauce. Can't wait to try this.
