Ingredients
  • 3 1/4 pounds of cut up chicken
  • 1 1/4 ounces of butter
  • 2 tablespoons of olive oil
  • 6 ounces of chopped onion
  • 9 ounces of chopped tomatoes
  • 5 tablespoons of tomato paste
  • 4 tablespoons dry red wine
  • 1 clove of garlic, crushed
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon
  • 4 tablespoons chicken stock
  • Had to convert from metric to imperial so adjust accordingly if you want more of a certain flavor.

Directions
  1. In a big frying pan, brown the chicken all over in the butter and olive oil.
  2. When it's golden all over, remove from the pan and pour off all but about 1 tablespoon of the fat.
  3. In the fat, saute the onions a bit.
  4. Then add the tomatoes, tomato paste, wine, garlic, spices and chicken stock.
  5. Stir it all together and bring to a simmer.
  6. Add the chicken back to the frying pan.
  7. Turn the burner to lowest heat.
  8. Cover and cook for 30 minutes.
  9. Uncover and simmer for another 30 minutes and then serve.

Although Greek have never tried it. Sounds interesting and shall definitely try it. Just a small correction it's called Chicken KAPAMA and not KAMPANA.
