Ingredients
  • 4 cups shredded cabbage
  • 2 tablespoons grated white onion
  • 1 cup shredded or grated carrot
  • 2 tablespoons distilled white vinegar
  • 2/3 cup mayonnaise
  • 2 tablespoons sugar
  • 1/2 teaspoon fine ground white pepper
  • 1/2 teaspoon salt

Directions
  1. The name, coleslaw, is derived from the Dutch words "kool," meaning "cabbage," plus "sla," meaning "salad." I offer for your enjoyment the classic coleslaw recipe, Aunt Ro's Coleslaw recipe and my own recipe, Richard's Coleslaw, a slaw without maynnaise.
  2. Prepare the vegetables by slicing, shredding or grating very thin.
  3. Toss the vegetable ingredients to mix well.
  4. Prepare the dressing by whisking together the vinegar, mayonnaise, sugar, salt and pepper.
  5. Fold the dressing into the tossed vegetables and refrigerate, covered, for at least 2 hours.
  6. May be made ahead. Toss occasionally to keep the dressing distributed over the vegetables.
