This is a very easy marinara that can be cooked fast or slow depending on your time. You can use any type of pasta you want but my pictures show spinach/cheese tortellini. Oh yeh, the 2nd picture shows that biggest counter in my kitchen!!!!!!!!!!

Ingredients
  • 1 14.8 oz. can of diced petite tomatoes
  • 1 8 oz. can tomato sauce
  • 1/3 cup diced onion
  • Dried basil, dried oregano, Italian seasoning, garlic powder to taste
  • Fresh basil (I freeze mine) (couple tablespoons chopped)
  • 1/4 cup red wine
  • Kosher or sea salt and cracked pepper to taste

Directions
  1. Put diced tomotoes, tomato sauce, herbs , salt and pepper in food processer until well blended.
  2. Pour into sauce pan and taste to see if need more herbs, garlic, salt or pepper.
  3. Pour in wine.
  4. Cook as fast or slow as you want. I prefer cooking slow to infuse all of the flavors. After well heated, taste again to see if you need to add anything.

You don't have to add the wine. I just like the lavor in sauces.

I always add a little splash of red to my marinara, I like the depth it gives the sauce. Nice post.
