This is a sauce used here in Texas and in Mexico, at least along the border.. Tomatillos look like little green tomatoes in a husk... It is another thing that is hard to discribe.. You either like it or not.. I love it.. Hope you do to

Ingredients
  • 4 pounds tomatillos peeled
  • 1/2 cup onion chopped
  • 1/4 cup olive or canola oil
  • 1 teaspoon salt or more
  • 1/2 teaspoon pepper
  • 2 cloves garlic chopped

Directions
  1. Boil tomatillos in small amount of water until tender; blend in food processor.
  2. In skillet, saute onions in oil.
  3. Add pureed tomatillos, seasonings and garlic.
  4. I also like to add cumin.. as it is one of my favorite spices.. but the original dish does not call for it..
  5. Enjoy

Many salsa verde recipes include jalapeno or serrano peppers, five or six if serrano becasue they are hot. Also cilantro at the end. Do not cook the cilantro.


Oh linebb - now I'm gonna have to pull out my cilantro salsa verde cream recipe...this homemade salsa verde would be EXCELLENT in it!!
