Ingredients

How to make it

  • Lightly cook onions in large pot.
  • Add garlic and brown for 1 minute.
  • Add chicken broth, rinsed and drained hominy and spices. Cover and simmer for at least 1 hour.
  • Add Rotel and diced tomatoes.
  • Simmer for 15 minutes.
  • Add shredded chicken, simmer for 10 minutes.
  • Stir in cilantro and serve.
  • Serve with dollop of sour cream, grated cheese and fresh cilantro.

    Oh yeah... I love this .. and with chicken. I do hope it stays cool here. I have had soup almost every night... This is going on my list!

    In case you might be afraid of this because of the hominy, don't be. After the soup simmers, the hominy loses its definite flavor and blends in with the other ingredients make a wonderful flavor
    It was a delicious soup that really hit the spot.
    I served it with fresh corn waffles found on this site.
