  • 2 tablespoons butter or margarine
  • 2 tablespoons all-purpose flour
  • 2/3 cup warm milk
  • 1/3 cup chicken broth
  • 1/8 teaspoon white peper
  • 2 hard-cooked eggs
  • 2 tablespoons chopped chives

  1. Use a ham slice or leftover ham. Trim off visble fat.
  2. Melt butter in a skillet. Add flour and cook over low heat for 2 to 3 minutes.
  3. Slowly stir in the milk and broth. Add pepper. No salt is needed as the ham is salty. Cook, stiring, until thickened.

  5. Cut large squares of cornbread, heated if possible. Split.
  6. Spoon mixture over halves. Sprinkle with chives.

Sounds good as I often have left over ham as I tend to cook a ham joint often and do not always use it all.

I love..love recipes like this...it reminds me of the simplicity that sausage and gravy offers...not very many people would dislike this!

This looks very good! I'll be having ham this week so I'm going to bookmark this for later.
