Ingredients
  • 1 C. sugar
  • 1/2 C. oil
  • 2 eggs
  • 1 C. mashed bananas
  • 1/2 C. sour cream
  • 1 tsp. vanilla
  • 1 1/2 C. flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt

Directions
  1. Preheat oven to 350.
  2. Grease and flour two bread pans.
  3. In a large bowl, beat together sugar and oil.
  4. Add eggs, bananas sour cream and vanilla; blend well.
  5. Add flour, baking soda and salt; stir until dry ingredients are moistened.
  6. Pour into prepared bread pans.
  7. Bake at 350 for 50 to 60 minutes or until toothpick inserted comes out clean.
  8. Cool 5 minutes.
  9. Remove from pan.
  10. Cool completely.
  11. Wrap tightly and store in refrigerator.
  12. For Muffins:
  13. Prepare as above.
  14. Bake in muffin tin for 15-20 minutes or until toothpick comes out clean.

Yes, been waiting for this one, with oil instead of a solid shortening, and the sour cream...you're right, some others tend to be dry. Thanks for the great post!


I have made this recipe at least a half a dozen times now, its perfect every time and i shared it with everyone i work with and they love it. i usually add in some cinnamon as well just for extra fun.
