Really Quick Chicken Curry

- 2 each small onions; chopped shopping list
- 4 tablespoon butter or margarine; melted shopping list
- 1 tsp salt shopping list
- 1 tsp garlic powder shopping list
- 1 tsp ground allspice shopping list
- 1 tsp curry powder shopping list
- 1/2 tsp ground turmeric shopping list
- 1/2 tsp ground cardamom shopping list
- 1/2 tsp ground cloves shopping list
- 1/4 tsp ground red pepper shopping list
- 1/4 tsp black pepper, or less shopping list
- 1 1/2 cup chicken broth shopping list
- 2 each lime juice (fresh) shopping list
- 3 cups cooked chicken; diced shopping list
How to make it
- Saute onion in butter 1 min; add salt and spices, cook 2 mins, stir in
- broth and lime juice.
- Add chicken and heat through.
- Serve over fragrant basmati rice.
- To make ahead:
- Make sauce and cool. Put chicken in zip top bag, add sauce.
- Refrigerate up to 24 hrs.
- To serve: coook over medium heat until heated through, stirring
- occasionally.
- Fastest if you cut up a rotisserie chicken from the grocery store.
- Serve with Major Grey's chutney.
