How to make it

  • Coat a non-stick pan with Canola oil spray and heat it at 40% of max (just below Medium on the stove)
  • While the pan heats, start the beating with some eggs until they just start to become frothy.
  • Heat the pan until a drop of water sizzles in it.
  • Add the beaten eggs.
  • Start stirring the eggs around when they begin to firm.
  • Add all the ingredients but the cheese.
  • Continue mixing up the omelet until most of the eggs have almost no liquid remaining.
  • Push all of it together so that it sticks together
  • Top with cheese and serve

    This was a tasty and quick breakfast. I only wanted two eggs so I used a scant 1/8 of a cup (or a scant two tablespoons). I am an onion lover but I wish the onions weren't so crispy. I would have liked them done a little bit more. Didn't bother to measure the cheese and I had no bell pepper. A bit more in IMI 7/19/16
