    I found this recipe using the ingredient search "chopped ham" as I had some leftover to use up. I realized after making this I have never had an omelet before. I don't make them and if I do eat breakfast out (which is only if I am traveling) I always order Eggs Benedict minus the Hollandaise which must not be as crazy as you think as I have never had a waitperson make a comment. Anyway - I didn't like that the onions were still crispy and I am an onion lover. But, as I have never had an omelet, that may be the way onions are in an omelet so what do I know. Still, cooking the ham and onions after the egg was nearly done cooking didn't heat them up much or cook them as much as I would have liked. I did, however, eat it. :-)

Maybe the next time you are out for breakfast order an omelet. They vary so much, I make mine so the egg looks like a crepe and I fill it with cheese and other things then flip it over on itself so it looks like a half moon. Nice pic but it doesn't look like an omelet to me.

    Thank you for letting me know that you cook your onions and other additions first. That made sense to me. I was surprised to realize I had never had an omelet before either! Maybe I should look up a couple of recipes here to see what others do.

This is exactly how I make eggs except I saute the ham, peppers, and onions first, then add the eggs and scramble. When it's done, I mix in the cheese and serve. I have been to an omelet bar before. They make them right in front of you and you can pick what goes in them. They make it look so easy! The raw vegetables always seem to get cooked and the eggs are perfect. Mine never turn out that way no matter how hard I try. As they say, some things are just better when someone else makes it for you. :)

    I think I may have to order one at some point. We have a truck stop that serves breakfast all day. Next time I eat lunch there, I will try one.
    I saw a video one time of Julia Child making omelets. She made more than one and she made it look so easy! So, I knew it wasn't so I've never tried making one. :-D
