How to make it

  • In Large Bowl, Beat Butter on High Speed for 30 Seconds, Add Sugar, Baking Powder, Baking Soda, Cinnamon, & Salt & Beat Well.
  • Beat in Pumpkin, Egg, & Vanilla. Beat in as much Flour as you can with Mixer, Stir in any remaining Flour with a Wooden Spoon. Stir in Butterscotch Morsels. Drop by rounded teaspoons ( I roll them into small balls) onto ungreased Cookie Sheets. Bake at 375 Degree Oven 8 to 10 Minutes or until Edges are Lightly Brown Time depends on your oven, keep an eye on your first batch for approximate time. Cool on Wire Rack & then ENJOY
