Ingredients

How to make it

  • heat about 1and a 1/2 cups of water
  • throw in the whole spices,chillies, ginger and the vegetables [or you could steam all the vegetables first instead of cooking them in the water - but if you do them this way,the flavours of the vegetables gets in to the water and everything comes together well]
  • add salt to taste
  • when the vegetables are cooked,mash a few of the potato pieces to thicken the stew
  • add coconut milk - [keep the flame on low]
  • don't let the coconut milk boil, when it simmers gently switch it off and cover with a tight lid to let all the flavours come together.
  • enjoy!

    hi - hope you like it when you try it out...yes, eating coconut based foods everyday can increase your cholestrol levels...but in south indian style cuisine, where coconut is used in a lot of dishes, i find that i can make do with just one coconut for about 10 days... or i make sure that i don't use coconut more than once a week. And if the rest of your food is relatively oil free, it should be okay...

    Sounds wonderful. Isn't coconut milk a grand thing? I know that it isn't considered by some to be very healthy, but there are far worse things a person can cook with. I'll be trying this recipe very soon.
