Gingerbread Waffles

- 3 C. all-purpose flour shopping list
- 4 tsp. baking powder shopping list
- 2 tsp. ground cinnamon shopping list
- 2 tsp. ground ginger shopping list
- 1/2 tsp. freshly grated nutmeg shopping list
- 1/2 tsp. salt shopping list
- 4 large eggs shopping list
- 2/3 C. packed dark brown sugar shopping list
- 1 C. canned pumpkin puree (not flavored) shopping list
- 1 1/4 C. milk shopping list
- 1/2 C. molasses shopping list
- 1/2 C. (1 stick) melted butter shopping list
How to make it
- Preheat waffle iron.
- In a large bowl, combine flour, baking powder, cinnamon, ginger, nutmeg and salt.
- In a medium bowl, beat eggs and brown sugar until fluffy. Then beat in pumpkin, molasses, and melted butter.
- Stir the wet into the dry until just moist. ** Do not over-stir the waffle batter.**
- Brush the iron with butter or spray with cooking spray and cook waffles. Note: Mine usually take about 4 minute each, but machines vary, so just keep an eye on them.
