How to make it

  • *Place milk, rice and lemon peel into sauce pot- bring to a boil then adjust temperature to simmer for approximately 20 minutes. Stirring constantly to avoid sticking and scorching.
  • *Hand mix the eggs, sugar and vanilla together.
  • *Remove the lemon peel and discard only after the rice has plumped.(Rice will seem to be over cooked)
  • *When the rice is cooked correctly remove from the heat and add the egg, sugar and vanilla mixture slowly, stirring constantly. This mixture will thicken. Be sure to blend this mixture thoroughly. Taste with a spoon.
  • *Chill your rice pudding into a glass bowl. Chill for 1 hour.
  • *Whip the heavy cream till just before soft peaks.
  • *Fold cream into the rice pudding mixture. Taste with a spoon. Sprinkle with ground cinnamon. Taste with a spoon, Cover and refrigerate.
  • * Always taste and ENJOY.

    How does 1/4 cup of Splenda translate into 2 c regular sugar? It's a 1:1 measurement.
