Greek Diner Rice Pudding Recipe
This dessert is so easy I can do it. No baking just boil, simmer and chill.

Ingredients
  • 2 cups carolina rice or similar
  • 2 quarts milk
  • 1 whole lemon peel

  • 6 large eggs
  • 2 cups cane sugar ( can be substituted with splenda- 1/4 cup or according to your taste)
  • 1 teaspoon vanilla
  • ~~~~~~~~~~~~~~~~~~~~~~~
  • 2 cups heavy cream
  • ~~~~~~~~~~~~~~~~~~~~~~~
  • Sprinkle Cinnamon

Directions
  1. *Place milk, rice and lemon peel into sauce pot- bring to a boil then adjust temperature to simmer for approximately 20 minutes. Stirring constantly to avoid sticking and scorching.
  2. *Hand mix the eggs, sugar and vanilla together.
  3. *Remove the lemon peel and discard only after the rice has plumped.(Rice will seem to be over cooked)
  4. *When the rice is cooked correctly remove from the heat and add the egg, sugar and vanilla mixture slowly, stirring constantly. This mixture will thicken. Be sure to blend this mixture thoroughly. Taste with a spoon.
  5. *Chill your rice pudding into a glass bowl. Chill for 1 hour.
  6. *Whip the heavy cream till just before soft peaks.
  7. *Fold cream into the rice pudding mixture. Taste with a spoon. Sprinkle with ground cinnamon. Taste with a spoon, Cover and refrigerate.
  8. * Always taste and ENJOY.
