Greek Diner Rice Pudding

- 2 cups carolina rice or similar shopping list
- 2 quarts milk shopping list
- 1 whole lemon peel shopping list

- 6 large eggs shopping list
- 2 cups cane sugar ( can be substituted with splenda- 1/4 cup or according to your taste) shopping list
- 1 teaspoon vanilla shopping list
- ~~~~~~~~~~~~~~~~~~~~~~~ shopping list
- 2 cups heavy cream shopping list
- ~~~~~~~~~~~~~~~~~~~~~~~ shopping list
- Sprinkle cinnamon shopping list
How to make it
- *Place milk, rice and lemon peel into sauce pot- bring to a boil then adjust temperature to simmer for approximately 20 minutes. Stirring constantly to avoid sticking and scorching.
- *Hand mix the eggs, sugar and vanilla together.
- *Remove the lemon peel and discard only after the rice has plumped.(Rice will seem to be over cooked)
- *When the rice is cooked correctly remove from the heat and add the egg, sugar and vanilla mixture slowly, stirring constantly. This mixture will thicken. Be sure to blend this mixture thoroughly. Taste with a spoon.
- *Chill your rice pudding into a glass bowl. Chill for 1 hour.
- *Whip the heavy cream till just before soft peaks.
- *Fold cream into the rice pudding mixture. Taste with a spoon. Sprinkle with ground cinnamon. Taste with a spoon, Cover and refrigerate.
