Mushroom Bisque

- 1 pound fresh sliced button mushrooms shopping list
- 3/4 pound sliced cremini mushrooms shopping list
- 2 diced shallots (optional) shopping list
- 2 cups chicken stock shopping list
- 9 Tbl. butter shopping list
- 9 Tbl flour shopping list
- 4 1/2 cups half and half shopping list
- 1/2 cup dry white wine shopping list
- 1 tsp fresh rosemary shopping list
- 1/2 tsp dried thyme shopping list
- 1/2 tsp dried basil shopping list
- 1 -2 cloves minced garlic ( like mine garlicky) shopping list
- 1 tsp salt shopping list
- 1 tsp pepper shopping list
- dash of hot sauce (optional) shopping list
How to make it
- For smoother soup grind mushrooms, for a chunky soup place sliced mushrooms in a large pot with the chicken stock, wine and shallots; simmer uncovered 15 minutes until wine is cooked down. Cover and simmer 15 minutes. Melt butter in a saucepan; add flour and stir till blended. Add half & half and stir unitl thickened. Add to mushroom mixture. Add spices, salt and pepper. Simmer 15-20 minutes. Add hot sauce. Enjoy!
