A colorful salad thats sweet, sour and just plain good. Note this salad is better if made a day or two ahead of time for the flavors to meld.

Ingredients
  • 2 cups fresh or canned green beans
  • 2 cups fresh or canned wax beans
  • 2 cups canned kidney beans or dry and soaked kidney beans
  • 1 can garbanzos or chick peas (same thing depends where you are from)
  • 3/4 cup sugar
  • 2/3 cup white or red wine vinegar
  • 1/2 cup evoo (extra virgin olive oil)
  • salt to taster or lemon pepper instead of salt
  • 1/2 large yellow onion sliced into rings and separated
  • 1/2 cup thinly sliced bell pepper (your choice of color)

Directions
  1. Drain beans or place raw beans in bowl
  2. combine and add green pepper and onions, mix well
  3. combine the rest of the ingredients well in a bowl or shake in a jar
  4. add to the bean mixture
  5. refrigerate
  6. shake or stir once in a while to allow everything to coat
  7. serve
