walnut and honey fudge

- 1 1/2 cups sugar shopping list
- 1 cup brown sugar shopping list
- 1 cup cream shopping list
- 2 tablespoons honey shopping list
- 50 g butter shopping list
- 1 teaspoon vanilla shopping list
- 1 teaspoon finely grated orange peel shopping list
- 1/2 cup chopped walnuts shopping list
How to make it
- Line a 20 cm square tin with foil and spray with oil. Spray the sides of a medium heavy saucepan with oil. Place the sugar, brown sugar, cream and honey in the saucepan and over a medium to high heat, stir, bringing the mixture to the boil. At the soft ball stage (120°C, using a sugar thermometer to check) remove from heat, add butter, vanilla and orange peel -do not stir, but cool until 70°C. then beat until thickening. Add nuts and continue to beat until the fudge starts to loose its gloss and is very thick, then pour into prepared pan. Score into squares while still warm -if desired press a walnut 1/2 into each square.
