Ingredients
  • CRUST:
  • 1 - cup coarsely chopped cashew nuts
  • 1/2 - cup graham cracker crumbs
  • 1/4 - cup sugar
  • 1- tbsp. unsalted butter
  • STRAWBERRY PUDDING:
  • 2 - cups quartered strawberries
  • 1 - 250 ml. all-purpose cream
  • 1 - cup condense milk
  • 1/4 - cup cornstarch
  • 2 - tbsp. lemon juice
  • 2 - tsp greated orange peel

Directions
  1. FOR THE CRUST:
  2. Combine all ingredients until evenly moist.
  3. Press crust onto the bottom of dessert bowls.
  4. FOR THE PUDDING:
  5. Combine all ingredients in a double boiler.
  6. Cook while stirring constantly for 16 minutes or until thick.
  7. Pour over crust. Let cool before chilling in the refrigerator for at least 6 hrs.
