Ingredients

How to make it

  • Sauté onion and green pepper in butter.
  • Place cheese in crust then add onion, pepper, chorizo, green chilies and cilantro.
  • Beat eggs and half-and-half together until slightly foamy then add cumin, salt and pepper.
  • Pour into pie shell until not quite full.
  • Bake at 350 until brown and domed.
  • Cool very slowly to avoid falling.
  • Cool before serving.

    This dish was one of the first to go at a Mexican themed potluck lunch. Everyone loved it. Different. Pretty dish. Very easy to make. I did blot the chorizo with towels - good idea. Will definitely make again.

    This was delicious! Definitely different from any of the traditional quiche recipes. I would only recommend that cooks actually use paper towels to blot any remaining oil from the cooked chorizo before adding to eggs. Mine was "well-drained" but the oil was still enough to make the eggs separate.
