Apple Raisin Cake

- 4 to 5 cups of apples, peeled and chopped, you do NOT have to peel them if you like or do not mind the peel left on. I use Macintosh. shopping list
- 1/2 cup of water shopping list
- 3/4 to 1 1/4 cup (depending on how many apples you choose to use, and if you want to use less sugar over all) of brown sugar, packed, divided. Place at least 1/3 to 1/2 cup of the sugar in with your apples to cook in the pot. shopping list
- 2 1/2 cups sifted flour (works well with Whole Wheat!) shopping list
- 1 1/2 teaspoon of baking powder shopping list
- 1 1/2 teaspoon of baking soda shopping list
- 1 1/2 teaspoon of salt shopping list
- 1 1/2 teaspoon of cinnamon (sometimes I use 2) shopping list
- 1 teaspoon of allspice, I also sometimes grate a bit of fresh nutmeg to add in...not really measured. shopping list
- 1 2/3 cup of oatmeal shopping list
- 2/3 cup of seedless raisins shopping list
- 2/3 cup of chopped pecans or walnuts or hickory nuts are good too. (for an extra flavor kick...roast the nuts if they are raw.) shopping list
- · 2 eggs, beaten (You can use 3, but you don't have to) shopping list
- · 1/3 cup of melted shortening or oil shopping list
- · Frosting: shopping list
- · 1/2 cup butter (4 ounces) shopping list
- · 1 cup brown sugar shopping list
- · 3 to 5 tablespoons milk shopping list
- · 1 box confectioners' sugar (1 pound), about 4 cups shopping list
How to make it
- Line the bottom of your Tube pan with wax paper or parchment. There is no need to flour the pan, but I do like to lightly spray with a pump only natural oil.
- Combine the chopped apples, water and 1/2 cup of the brown sugar.
- Cook in a pot on the stove, for about 5 minutes or until the apples are almost tender and then cool.
- In a mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, allspice, oatmeal, raisins, and pecans; stir in the cooled apple mixture, eggs, remaining brown sugar, and the oil.
- Mix together until just moistened.
- Bake in a 10-inch tube pan for about 40 minutes at 350°.
- Cool for about 10 minutes before removing from the pan.
- Serve the cake warm or cold.
- The cake may be lightly frosted with a mixture of 1 cup powdered sugar and 2 or 3 teaspoons of warm water. OR you can make up a Caramel Frosting or "Drizzle" to add.
- Caramel Frosting: Cook butter and sugar together until well blended and sugar is dissolved.
- Add 3 tablespoons milk and 1 box of confectioners' sugar.
- Beat and add just enough milk to spread. If you want to keep it dairy free, skip the milk and use Apple juice or Apple cider. It will lack the true "creamy" texture of one using dairy, but the flavor is just fine! To make it a drizzle...use less sugar...make it thinner and drizzle less than you would use to "frost" it!
